The perfect mouthful of tangy chewiness. Great for a mid-day pick-me up or after-dinner nibble.



Prep Time: 20 minutes
Cook Time: 43 minutes



1/2 cup all-purpose flour
3 tbsp brown sugar
3 tbsp butter, melted
1 cup granulated sugar
1 large or 2 small lemons, for 2 tsp zest and 3 tbsp juice
1/2 tsp baking powder
2 large eggs, lightly beaten
1/4 tsp salt
2 tbsp all-purpose flour

1. Preheat oven to 350F (175C). Line an 8-inch (20 cm) square pan with aluminum foil and coat with cooking spray.

2. Combine crust ingredients. Press into pan. Bake until golden, about 18 minutes.

3. Meanwhile, whisk together filling ingredients until smooth. Pour on top of baked crust. Bake until center is golden and begins to come away from side of pan, about 25 minutes.
